Tuna salad with apple and celery

Tuna is one of the staples in our household. We eat it all the time, because it is simple and can be eaten for breakfast, lunch, dinner and snack. Here is our favourite recipe.


Serves 2 or 3 or 4, depending on how hungry you are and what you eat it with.


Ingredients:


2 cans of tuna in water, drained

1/2 an apple

1 stalk celery

1 tbsp capers

1 spring onion or a small red onion, finely chopped

4 small pickled cucumbers (sugar free)


Dressing:

1 tbsp sugar-free mayonnaise

1 tbsp Greek yoghurt

salt

pepper


Method:


Put the tuna in a bowl and break it up with a fork. Slice the celery and the apples. I like them being cut to the same thickness. Chop the pickles small. Add the finely chopped onion and the capers. Mix it together with the dressing ingredients and done.


You can add any fresh herb you like. Dill goes especially well with tuna.


It is delicious on it's own but can be eaten as a spread too.


For WILDFIT Spring, omit the apple. Otherwise, a perfect WF Summer dish.
