This is one of our #WildFitSpring staples, we probably have it every other day. It is an excellent source of vitamins C,D and Bs and omega-3s. And this is what most of us are deficient in. So, yeah, another superfood. You are welcome.
Ideally you would need a cast iron pan to prep the salmon. But you can just as easily skip the whole cooking on stove top and in the oven part and steam it instead. It is equally as delicious with a more subtle flavour.
Ingredients (for 2):
2x150g wild-caught salmon filets (I love it with skin on)
1 small sweet onion or a shallot, chopped
1 tbs olive oil
1 broccoli
pepper & salt to taste
1 cup of the Magic Sauce
Method:
Preheat the oven to 180C. Pat your salmon dry and season the skin side well with salt and pepper. Heat a table spoon of olive oil a cast iron pan. When it's hot put in the salmon, skin side down and let it sizzle away for 2-3 minutes. Now cook on the other side for a minute. Then flip it back to skin side and put it into the oven for 9 minutes for rosy pink and 11 minutes for full doneness. In the meantime chop your onion as finely as you can.
Steam the broccoli for 10-15 minutes. Set it aside.
When the salmon is done, take it out f the oven and put it on a plate to rest. Add the onion into the same pan and turn on the heat to sauté the onions. You can add a tablespoon or two of water if you need to deglaze. Season with a bit of pepper and salt. Don't overcook it. When done, mix it in the Magic Sauce. You didn't see that coming, did you, ha?
Serve the salmon with the broccoli and a generous helping of the oniony Magic Sauce.
