This is a base recipe that you can pair with healthy veggies or starches. We like it served in lettuce wraps, on a bed of cauliflower rice or on zucchini noodles. But you can also serve it with rice, potatoes or pasta.
Tip: try it with the Magic Sauce. It. is. to. die. for.
Makes 4 large portions
Ingredients:
500g ground pork
1 onion chopped
2 medium carrots grated
1 stalk celery finely chopped
2 cloves garlic finely minced
1 tbsp olive oil
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp black pepper
2 tsp salt (or top taste)
1/2 bunch of coriander to garnish
Method:
Heat one tablespoon of olive oil on a pan and when it's really hot, add in the pork. Mix continuously to break up the bigger pieces. Cook for 5 minutes or until the moisture evaporates, but be careful not to dry it out. Take out the pork and use the same pan to sauté the onions, carrots, celery and garlic. Add in the dry spices and salt and coo for 3-5 minutes or until the veggies are soft but not mushy. Now you can add back the meat. Turn the heat to low, stir through and cook for another few minutes. Ideally let it sit for 10-15 m minutes before serving. I only add in the coriander (or any fresh herb) when I am serving.
Options:
you can add a can of good quality whole tomatoes
switch up the spices! Use oregano and basil for a more Italian taste
For WildFit Spring: leave out the carrots
