Great for on the go or as healthy snack with tea of coffee.
Makes 24 balls
Ingredients:
2 small ripe bananas
2 cups oats
1/3 cup grated coconut
2 tablespoon nut butter
1 tbsp honey
1/3 cup dried cranberries
2 teaspoon vanilla
1 pinch of salt
Mix everything together in a bowl. If it is too crumbly, add a tablespoon of water or coconut oil for some extra healthy fat. Pop into the freezer for at least 30 mins.
Some variations and tips:
soak the cranberries in water for a few minutes before adding them into the mixture
add a spoon of honey for extra sweetness
drizzle chocolate over if you like it fancy
