This is our favourite banana bread recipe ever. Full stop.
Ingredients:
3 medium overripe bananas
100 grams fresh date paste (you can throw some dates in the food processor to make it, if you can't buy it)
½ cups applesauce
1 large egg
1 teaspoon vanilla extract
1 cup oat flour
½ cups cocoa powder
1 teaspoon baking soda
¼ cups raisins
¼ cups walnuts
½ teaspoons salt
Method:
Preheat the oven to 170 degrees C. Break the bananas with a fork. Add them together with the date paste, applesauce, egg and the vanilla extract into a food processor (I am obsessed with my Vitamix, so everything goes in there...). Mix until well combined. Combine the dry ingredients in a bowl. I chop the raisins (if they are large) and walnuts before I throw them in too. Combine the dry and wet ingredients and mix through. Put baking paper lengthwise and across your baking form so that it is easier to take the banana bread out. Pour the mixture into the baking form. Bake for 35-40 minutes. Test with a toothpick for readiness.
Important: leave it to cool for an hour before you cut into it. I know... Impossible. But so worth it.
